PALEO UPSIDE DOWN CAKE

IMG_7813 I love anything related to cake. Or dessert. Or sweets. Sadly a lot of these goodies aren’t actually good for us.

SO… I found a recipe that is healthy and doesn’t compromise taste. It’s also really easy to put together. Happy baking.

 

 

 

 

 

 

INGREDIENTS:

1 cup almond flour

2 eggs (I use organic)

5 tablespoons raw honey

3 tablespoons pure maple syrup

3 round slices of pineapple (1/2 inch thick

3 tablespoons coconut oil (liquefied)

½ teaspoon baking powder

¼ cup fresh raspberries (optional)  IMG_7801

 

DIRECTIONS:

  1. Preheat oven to 350. Place 1 tablespoon of the raw honey in 9’’ round cake pan. Cook for 15 minutes.
  1. Mix almond flour and baking powder in a bowl. In a separate bowl, mix eggs with remaining honey. Then add coconut oil to wet mixture. Mix both dry and wet mixtures together.
  1. Remove cake pan with pineapples & honey from oven. Pour batter into pan, over cooked pineapple. Bake for 35 -40 additional minutes. Use toothpick test to determine how long.
  1. Let stand for 10 minutes. Garnish with maple syrup and raspberries. Then enjoy!
