Paleo Banana Bread

IMG_4332Summer is right around the corner, and (sadly) hiding behind a moo moo isn’t really an option at my age. SO… I’m preparing Paleo meals and snacks as often as possible. Paleo recipes are healthy, gluten free, and easy to digest. I’ve found that eating Paleo also helps shed weight more quickly than other “diets” when mixed with a moderate amount of exercise.

This banana bread is delicious, easy to make, filling, and will help curb sweet cravings. It also travels nicely if you want to have a healthy breakfast or snack on the road. Hope you enjoy it as much as I do!



 4 ripe bananas

4 eggs (I use cage-free)

½ cup almond butter

4 tablespoons grass fed butter (or coconut oil if allergic to dairy)

½ cup coconut flour

2 tablespoons cinnamon

1 tablespoon coconut sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon vanilla

¼ teaspoon sea salt



Preheat oven to 350 degrees

  1. Mix eggs, bananas, butter (melted), and almond butter. Blend well.
  2. Add coconut flour, 1 tablespoon cinnamon, baking powder, baking soda, vanilla & sea salt. Mix well.
  3. Pour mixture into greased bread pan. You can use butter or coconut oil to grease the pan.
  4. Mix 1 tablespoon cinnamon with 1 tablespoon coconut sugar. Sprinkle this on top of mixture.
  5. Bake for 60 minutes, or until a toothpick inserted comes out clean.

 Tip: You can serve this plain or top with some fresh fruit, sunflower seed butter, or grass fed butter. Enjoy!
