4 & 1/2 tablespoons unsalted butter

8 oz tubettini pasta

2 tablespoons all-purpose flour

2 cups whole milk

12 oz sharp cheddar cheese, shredded (1.5 bags)

1/2 cup bread crumbs

1 tbsp salt

1/4 tsp fresh ground pepper

OPTIONAL: 1/2 tsp chili flakes (for extra kick)

1. Preheat oven to 350 degrees. Grease a muffin pan using 1/2 tablespoon of the butter. A regular or mini sized muffin pan will work.

2. Heat 2 tablespoons butter in a saucepan over medium heat. Add the flour and stir until smooth, about 1 minute. Add milk and lower heat. Stir 8 – 10 minutes, mixture will thicken. Add cheese, 1/2 tbsp salt, and pepper (& chili flakes if desired), stir until all ingredients are smooth. Keep mixture warm over minimal heat.

3. In a medium sized pot boil water with 1/2 tbsp salt, cook pasta 7 – 9 minutes. Drain pasta, add pasta to cheese sauce. Stir cheese and pasta together until completely mixed, then pour even amounts of mixture into muffin cups.

4. Melt remaining 2 tablespoons of butter in a medium sized skillet. Stir in bread crumbs until golden, takes about 3 – 4 minutes. Sprinkle bread crumb mixture over tops of the macaroni muffins.

5. Bake mac muffins 15 minutes, or until golden and bubbly. Let muffins cool in pan for an additional 15 minutes before removing (this helps them from falling apart).

Applaud yourself & ENJOY!
