Maple Syrup Banana Bread with Cream Cheese Frosting

If you’re a fan of bananas this recipe is moist, dense, and overall just perfect.

I’ve tried many banana cakes over the years and my taste tester (aka my very picky eater of a husband) confirmed that this is his absolute favorite. It will make your entire house smell like vanilla, maple syrup, banana heaven… & it’s also perfect for serving at spring brunches, as well as an after dinner dessert.

INGREDIENTS:

CAKE:

1/2 cup butter (softened)

1 1/2 cups sugar

2 large eggs (beaten)

2 cups flour (sifted)

1/2 teaspoon salt

1/4 teaspoon baking powder

1/2 cup milk (I use organic)

1/3 cup organic maple syrup

1/2 teaspoon pure vanilla extract

3/4 teaspoon baking soda

3 very ripe mashed bananas (I use organic)

CREAM CHEESE FROSTING:

1/2 stick butter, softened

8 oz. cream cheese, softened (I prefer organic)

1 box powdered sugar (1 lb.)

2 teaspoons pure vanilla extract

 

DIRECTIONS:

1. Preheat oven to 350 degress F. Then grease two 9″ layer cake pans.

2. Cream butter, sugar, and eggs (for cake) in a mixer. Then add maple syrup and vanilla to this mix.

3. In a separate bowl mix sifted flour, salt, baking powder, & baking soda.

4. Add milk and flour mixture (alternating both) to the creamed butter mixture.

5. Add the mashed bananas to the mix and stir.

6. Pour even amounts of batter into both cake pans, bake 25 – 30 minutes.

 

FROSTING DIRECTIONS:

Mix cream cheese and butter till smooth. Add sugar and vanilla, blend well. Spread on cooled cake, making sure to frost layer in-between of course.

Serve up with milk, coffee, tea or champagne and ENJOY!
