Low-Fat Pancakes

161HBreakfast is supposed to get your day started right, not completely stress you out. So, here’s a simple pancake recipe that will make your family happy, not bust open the seams of your jeans, and still allow you to leave the house feeling zen. 

Low-Fat Pancake Recipe

1 ¼ cups all-purpose flour

1/4 cup white sugar

1/2 tsp baking powder

1/4 tsp salt

1 large egg

1 tbsp canola oil

1 1/3 cups low-fat milk

1 tsp vanilla extract

1 tsp cinnamon (optional)


1. Whisk flour, baking powder, cinnamon & salt in a large sized bowl. Whisk eggs, oil, milk and vanilla extract in a small bowl. Add wet ingredients to dry ingredients, stir well.

2. Heat a griddle or frying pan on the stove. Pour ¼ cup batter for each pancake. Cook until bubbles form and the edges appear cooked (about 1-2 min). Then flip and cook for another 1-2 minutes.

Serves 4 – 6 people
