Low-Fat Microwaveable Frittata

Do you feel like you’re constantly pushed for time in the mornings, yet trying to avoid fatty packaged foods? Don’t fret… you don’t have to live on bananas and yogurt for the rest of your life. This frittata recipe is easy, healthy, low-fat, and can be ready in 6 minutes or less. Best part: you can easily adapt the ingredients for each frittata to each person’s taste since these are made individually. Looks like your mornings just got better.                      




cup milk

Roma tomato 

1 – 2 
slices turkey bacon

cup shredded low-fat shredded cheese

½ cup broccoli

Pam cooking spray

Salt and pepper (to taste)

Red pepper (optional)

Low-fat sour cream (or plain Greek yogurt) as garnish


  • Spray a microwave safe small to medium sized bowl with Pam or a cooking spray of your choice.
  • Wash the broccoli and cut into edible sized pieces. You can also use spinach if you prefer.
  • Slice the tomato and toss it in. Same with the bacon. Throw the cheese on top of that. You can also add whatever other veggies you like or happen to have in your fridge. Mushrooms, bell peppers and olives could make a nice addition.
  • Beat the two eggs and milk in a separate cup lightly with a fork; pour over the ingredients in the bowl (some of these items may float to the top, that’s okay). Sprinkle lightly with salt and pepper.

Microwave on high for 3 minutes or so. Once the bottom of the bowl has no runny egg juice it is safe to say it’s done cooking. Wait a couple minutes for it to cool down and garnish with sour cream or Greek yogurt, tapatio is also a nice touch if you want a little kick. Enjoy!
