Italian Easter Cookies

DSCN0390 2Freshly baked & topped with buttercream frosting… Yes, please.

These cookies are simple to make, look festive, and taste even better. Whether you’re single, married or have kids, these are sure to impress your guests. I found this recipe on allrecipes.com last year and recycled it as my go-to this year, it’s definitely a keeper.

1/2 cup butter

3/4 cup white sugar

3 eggs

1 teaspoon vanilla extract

1 teaspoon almond extract

1/4 cup milk (I like to use organic)

1/4 cup vegetable oil

3 3/4 cups all-purpose flour

5 teaspoons baking powder

4 cups confectioners’ sugar

1/2 cup butter (softened)

1 teaspoon vanilla extract

3 tablespoons milk

food coloring (optional)

1. Preheat oven to 350 degrees & grease cookie sheets.

2. In a large bowl, cream 1/2 cup butter with white sugar until fluffy. Then beat in eggs one at a time, stir in vanilla and almond extracts, 1/4 cup milk & oil. Combine flour and baking powder, then stir in to wet ingredients. Roll dough into 1 inch balls and place on cookie sheets.

3. Bake for 5 minutes on the bottom shelf, then 5 more minutes on the top shelf. The bottoms of the cookies should be golden brown. Once cookies are cool you can frost them.

4. To make the frosting, cream together the confectioners’ sugar, 1/2 cup butter, 1 teaspoon vanilla extract, 1 teaspoon almond extract, & 3 tablespoons milk. Add food coloring and sprinkles if desired.
