Irish Tea Cake




St. Patty’s Day seemed like a great excuse to bake…

So I searched high and low for an Irish recipe that’s fun, classy, delicious, easy to make, doesn’t require green beer (because frankly I think it’s disgusting), and is somewhat low in calories. This yummy tea cake is all of the above AND it pairs beautifully with coffee, tea, champagne, and maybe even green beer!



1/2 cup butter (softened)

1 cup white sugar

2 eggs

2 teaspoons vanilla extract

1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon sea salt

1/2 cup milk

1/4 cup powdered sugar for dusting

Optional: 1/2 cup fresh berries for garnish





1. Preheat oven to 350 degrees F

2. Grease 9″ round pan

3. In a medium bowl mix butter and sugar until fluffy. Then add vanilla. In a separate bowl mix flour, salt, & baking soda. Stir the dry flour mixture into the fluffy butter mixture; alternating with milk. Make sure all ingredients are fully mixed.

4. Pour batter into greased pan and bake for 32 – 35 minutes. Let cool then place on serving plate.

5. Dust with powdered sugar and garnish with berries (if desired) and serve. Enjoy!
