Easy Peasy Egg Casserole

Do you feel like you’re ALWAYS on-the-go? Whether it’s rushing to work, school, appointments, the gym, or picking the kids up from daycare… it seems that we often need to feed ourselves (& our families) in a time crunched frenzy, yet we don’t want to compromise taste or making healthy choices.

SO… rather than swinging thru a McDonald’s drive-thru in a panic (which you should absolutely allow yourself to do every blue moon) here is a recipe that’s easy to prep and you can keep safely stored in Tupperware for 4-6 days after cooking. It’s perfect for when you want to grab a quick bite as you’re running out the door, and it also travels well in a Ziploc bag or Tupperware.

BONUS: It’s also a FANTASTIC dish to serve when hosting a brunch because you can cook it the night before and heat it up while guests are arriving… this gives you more time with you guests and less time stuck in the kitchen.

INGREDIENTS:

10 Organic Eggs (whisked)

1 Cup Chopped Turkey Sausage (already cooked)

1 Cup Organic Chopped Spinach (fresh, not frozen)

1 Cup Organic Sour Cream  (low-fat optional)

1/2 Cup Organic Heavy Whipping Cream

1 Cup Feta Cheese (crumbled)

1 Cup Cheddar Cheese (shredded)

2 Teaspoons Garlic Powder

1 Teaspoon Sea Salt

1 Teaspoon Pepper

Optional: 1 Teaspoon Red Chili Flakes (fun if you like spicy)

DIRECTIONS:

1. Pre-heat oven to 350.

2. In a skillet, brown and crumble turkey sausage.

3. In a large bowl: beat eggs, sausage, spinach, sour cream, heavy cream, cheese & seasonings.

4. Pour mixture into a greased 9×13 inch baking dish.

5. Bake (uncovered) for 40 -45 minutes, or until a toothpick inserted in center comes out clean.

 

Pour yourself a cup of coffee, or better yet a mimosa… & ENJOY!
