Chocolate Covered Strawberry Cream Cheese Cookies…




Yep… You read that right. These cookies are pretty, organic & also happen to be incredibly delicious. I recently made them for a (grown-up) girls slumber party and they paired perfectly with rose champagne. 



1 cup all purpose flour

1/2 teaspoon baking powder

1/8 teaspoon sea salt 

4 oz cream cheese (I used reduced fat)

1 egg

3/4 cup sugar 

1 teaspoon vanilla extract 

1/2 teaspoon almond extract 

3/4 cup chopped organic fresh strawberries 

1-2 tablespoons powdered sugar  

1 & 1/2 cups semi sweet chocolate chips (you can use white chocolate or dark chocolate if you prefer)

1. Preheat oven to 350 F and grease pans with butter.

2. Chop strawberries and make sure they are drained. Then toss them with the 2 tablespoons of powdered sugar.

3. Mix flour, salt, & baking powder in a bowl. Set aside.

4. Mix butter, sugar, & cream cheese until its nice & fluffy.

5. Add egg and vanilla to butter mixture.

6. Slowly add flour mixture (dry ingredients) to wet mixture. 

7. Stir in chocolate chips. 

8. Gently stir strawberries into batter.

9. Put mixture in fridge for 5 minutes before placing spoonfuls onto baking sheet.

10. Bake for 12 – 14 minutes. Edges should turn golden brown.

11. Wait about 3-5 minutes before transferring cookies to wire rack. 

Now pop open a bottle of pink champagne & ENJOY!!
